2 cups sugar
1 1/4 cups Karo syrup (light)
3 cups whipping cream
* chopped pecans, optional (personally, I like them better without nuts)
Bring sugar and Karo syrup to a boil - to dissolve sugar. Add cream one cup at a time, bringing to soft ball stage after each addition. Butter a 9 x 13 pan. If you are adding nuts, sprinkle the bottom of the pan with chopped pecans now. Pour caramel into pan. Let cool completely and cut into squares. SO DANG GOOD!
** This is really Gary's Grandma's recipe, but I only know these caramels as his ... he makes them every holiday season. I have the greatest husband.

So, I tried this the other night, and it was a disaster :( I'm a by-the-book recipe follower, so to my detriment I end up being a bit too literal when I follow recipes. The problem was I never got the caramel to the soft ball stage, the color was way too light, and they never "set". I think it was that I didn't let the sugar and corn syrup boil long enough. I just brought it to a boil and then started adding the cream. Bummer. Still worth another try though. They look so yummy!!
