Heavenly Rolls


If you love bread as much as I do, these are the best ever . . . even better than a dessert! This is my daughter's recipe that she makes in her Bosch mixer.

1/2 cup warm water
2 T (heaping) active dry yeast
2 T sugar
** "Prove" or dissolve yeast in warm water.

1 cup evaporated milk + water to equal 2 cups
**heat in microwave for 1 minute

1/2 cup oil
1/2 cup sugar
3/4 cup potato flakes
4 eggs
2 tsp salt
6 cups flour

Mix oil, sugar, and potato flakes in electric mixer . . . add the warm milk/water mixture . . . add eggs . . . add dissolved yeast . . . add salt and flour. Mix for 8 minutes -- the dough should pull away from the sides and even the center a bit. Put dough in an oiled bowl and let rise in oven until doubled. (Turn the oven on to heat at 350 for 1 minute and then turn off--set timer because you will forget to turn the oven off :). Punch down and shape . . . let rise again--will rise some more during cooking time.

Cook for 11-12 minutes at 350. Makes 2 dozen large rolls as pictured. (roll out dough in large rectangle and cut in strips --then form into loose knot)

I made your Eagle brand cookies that you saved but didn't publish ... they are the BEST sugar cookies I've ever made!!!! HANDS DOWN! So soft!! I published your post so that everyone can make them ;) ... hope you don't mind! Thanks so much for the great recipes!!

Don't mind at all--didn't even know I did that. I was going to submit it after making some for Valentines Day. On my bookclub blog we started archiving recipes in Dec. after one of our dinner/ socials...You know R.E.A.D. (read, eat, and, discuss:)

Made these tonight with my 11yr old son and they were a hit. Must be the potoato flakes hey? Thanks they complimented our beef stew.
