Restaurant-style Taco Salad

1 head iceberg lettuce, chopped
3 roma tomatoes, diced
1/2 small onion, diced
1 cup corn
1 cup black beans, drained
2 cups shredded cheddar or jack cheese
salsa
ranch dressing
1 pkg taco seasoning
* grilled chicken/taco meat optional

Combine all ingredients in a giant bowl. Serve with tortilla chips. This. Was. Heaven. The key: the taco seasoning. Ranch + salsa makes for a GREAT dressing.

Should serve 4-6 for a meal; 6-8 as a side salad.

You can make really easy mexican ranch dressing that would be great with this too...just add 1/2 c. ranch dressing to a handful of cilantro and juice of one lime and blend...yum!

Is this where I left a comment for Heidi (D.) before? If so, Heidi - hi!! Thanks for commenting on my blog! I've felt lame b/c you responded a long while back when I came across your comment on this or some other blog somehow ... and then I've been a little confused by whether you're on this blog or not and ended up never writing back! So I'm sorry.

Do you have a better way to contact you (maybe you already told me?) If so, let me know! I would love to hear what all you're up to.
Thanks again for your thoughtful comment - it was a great surprise!

:)

I've made this dozens of times ... I've used both the Old El Paso and Walmart's Great Value ... either one tastes great. It totally doesn't have to be the name brand one. Just one of the little envelope packages. Mmm. I'm making this on Sunday. It's so yummy. :D
