1/4 cup kosher salt
1/2 tsp black pepper
1 tsp dried basil (crushed -- I just grind it in my fingers)
1/2 cup olive oil
Heat oven to 350*. Cut pita pockets into triangles ... or whatever shape you prefer ... octagons are cool too. Pour 1/2 cup olive oil onto a plate. Mix kosher salt, pepper, and basil in a small dish. One at a time, lay each pita triangle (or octagon) in the olive oil and then place on cookie sheet. You only need to get one side of the pita wet with oil ... and place them all oil side up. That's important. Once you have a sheet full of oiled pita triangles, just sprinkle the seasoning mixture all over them. I thought I had WAY too much seasoning, but it was perfect! Plus, with the kosher salt, if it's too salty for you, it brushes right off ... so you can't really lose. Then, bake at 350* for about 15-20 minutes ... or until the olive oil seems to have soaked in and the pitas are a light medium brown. Let them cool on paper towels or a cooling rack for about 10 minutes. Once they are completely cooled, they are SUPER crunchy and oh so good!!
I thought about making some sort of dip that these would be good with, but so far we've been eating them plain ... and I think they'll be gone soon! Even Ryan likes them!!
And we all know that he's a punk when it comes to trying new things.
